POP-UP AT NORDEN LIVING

To officially welcome the holiday season we're co-hosting a fun pop-up with our friends over at Norden Living this Sunday, December 3 from 1:30-4pm. 

It's the kind of casual get-together that often takes place during the weeks leading up to the holidays in Denmark. Norden Living will be brewing up a batch of mulled wine (hvid gløgg) and we'll be there with warm rice porridge. 

Oh, and we'll also have a few of our Danish Ginger Cookie boxes with us there, if you feel the need.

No tickets or seats to buy in advance, just swing on by!

Kantine's Sunday Supper

There's something wonderful about Sundays. For many, it's a last day off before the work week revs up again. For myself and my family, it's a day of leisure and good, slow food.

I've often thought about hosting a Sunday dinner at my house, inviting family and friends over to our place for a casual meal. We'd start the meal early, just to make sure that there was plenty of time to talk with one another, relax and, of course, eat. 

So when The Perennial asked me to be a guest chef for their Sunday Supper on June 4, I just couldn't say no. And now that the theme and menu have been set, I'm so happy to share the news with you all.

I hope that you'll come and join us for this Scandinavian-inspired  dinner. We'll open early, already at 4pm, in case you feel a little lazy and don't want to rush things (or if you just happened to come from a performance of Hamilton)!

The dinner's 3-course menu is created in the spirit of Kantine, and it features three essential Scandinavian ingredients - Rye, Pork, and Milk. 

Small Plates (served at once)
Pork sausage, sorrel, pickled mustard seed
Herb and little gem salad, Grandma’s dressing
Rye and whey porridge, straw-smoked fresh cheese, heart, sorrel
 
Main Course
Pork shoulder roll, rosehips, fennel
 
Dessert
Buttermilk cotta, cherries and green almond shortbread

This time we are at a new location in Russian Hill.

Chef Nichole Accettola says:

One of my favorite spots in Copenhagen, Denmark serves a fabulous brunch consisting of small plates, a bit like tapas. I adore that little-bit-of-this, little-bit-of-that way of eating, and it's my source of inspiration for my Scandinavian brunch events. Some of the dishes will be savory, others will be sweet, and all are made in the spirit of my forthcoming restaurant Kantine: simple, chockfull of flavors, and made from the best local ingredients.

This is my fifth time hosting a Copenhagen brunch pop-up. It consists of one glorious course, composed of at least five small plates, bottomless coffee or tea, and optional sparkling wine.

Tickets are  booked through Feastly for the 10:00am seating, or the 12:30

Copenhagen Brunch in New York

As you may know, our plan is to open a restaurant in San Francisco in the fall of this year. Until that happens, we're all about having fun with our Scandinavian-inspired concept, and that means hosting a pop-up in NY in just a few short weeks.

Our NY brunch pop-up will take place at Boro 6 Wine Bar in Hastings-On-Hudson - a quick half hour train ride from Manhattan - on Sunday April 2, 2017. 

Why NY? Well, just a few months ago, our log-time friends Jennifer Aaronson and Paul Molakides opened a dreamy wine bar in their town, Hastings-on-Hudson - and we thought a pop-up event would be an excellent excuse for us all to collaborate and make some great Scandinavian-style food together. 

Here's the menu for the event:

Danish crisp bread with seasoned butter

Skyr with buckwheat muesli and sea buckthorn

Scandinavian-style frittata with roasted mushrooms, cabbage and caraway

Trout rillettes with pickled red onion on homemade sprouted rye bread

Hay-smoked fresh cheese, roasted beets, sprouts and horseradish

Cardamom-spiced Swedish knots

Wine:

Scandal Spritzer, Cava, Juve & Camps, Spain, Essentila Xarel-Lo reserva brut with elderflower essence, followed by:

White: Gruner Veltliner, Wieninger, Vienna Hills, 2014, or

Red: Pinot Noir, Joe Dobbs, Dundee Oregon, 2014

Scandinavian Spring Dinner - SOLD OUT

SPRINGTIME POP-UP DINNER ON MARCH 21

Our seasonal Scandinavian-themed pop-up dinners always seem to draw such a great crowd, and we are thrilled to announce that the next installment in this series will take place on Tuesday, March 21 at the Tradesman. 

The theme is Scandinavian springtime, and chef Nichole tells about her adoration for spring ingredients:


"Living in Copenhagen for over a decade, I learned how to make delicious food from the best and simplest ingredients. But during the long Danish winters, even I got tired of finding new ways to use root vegetables, cabbages and onions in my meals.

Once the snow had melted and the Easter lilies began to break through the soil, I could hardly wait for the return of fresh local asparagus, peas, rhubarb and those amazing bite-sized new potatoes. I envisioned the dishes I'd be able to create with those ingredients.

Though winter in San Francisco is much milder than in Copenhagen, my excitement for the spring season still remains."


This 4-course dinner will focus on the season's best local ingredients prepared in a Scandinavian manner. 

And as luck would have it, spring also marks the release of many new wines. Therefore, the talented folks at Revel Wines will be creating the evening's wine menu, which will include five newly released local wines.

A new year has begun, and we are thrilled to tell you about our first pop-ups of 2017! 

Chef Nichole writes:

Whenever we are in Copenhagen, we make a point of doing our rounds at our favorite eateries, one of which is a porridge bar called GRØD (the Danish word for porridge). The porridges there are delicious, and they remind us that a wonderful meal can be as simple, satisfying, comforting and inspiring as a single bowl (or two!) full of really good ingredients.    

Anyone who has been to our past brunches knows that we ADORE porridge, and it will certainly be on the menu at our upcoming brick and mortar restaurant. So it only seemed fitting to dedicate two of our February brunches to porridge and all its glory.

We're calling the events "Nordic Porridge* Brunch," and the dates are February 5 (click here) and February 25 (see below). As in the past, both brunches will be held at the Tradesman in the Mission. 

Something new this time around, we'll be staggering our reservations, so that you can choose the arrival time that works best for you. Each reservation secures your table for 1 1/2 hours.

Danish beer brand Mikkeller and Kantine will be teaming up to do a Scandinavian-style brunch pop-up during SF Beer Week. The event is called Beer Geek Brunch, and it takes place on February 18 at Mikkellers tasting room in Oakland. Scandinavian Winter Dinner - SOLD OUT

With three memorable brunches down, we only have one dinner to go before we bid farewell to 2016.

We're calling our last pop-up of the year "Scandinavian Winter Dinner" and it will be a four-course meal with accompanying wine menu.

It takes place at the Tradesman on Tuesday, December 6th at 6:00pm.

"For anyone who has survived winter in Scandinavia, one knows that the temperatures can be frigid, the hours of daylight are few, and the best way to deal with it all, is to discover the upsides of the season.

When I lived in Copenhagen, wintertime meant essentially two things: The start of the ice swimming season and the return of simple, flavorful comfort food.

That wondrous wintertime fare is my reason for wanting to host a special event filled with good food, good wine and good people."
