For anyone who has ever survived a winter in Scandinavia, they know that the weather can be frigid and the hours of daylight few, and that the best way to cope with both is to focus on the upsides of the season.
When I lived in Copenhagen, I dealt with the dark winter months by enthusiastically embracing the start of the polar bear swimming season and the return of flavorful and hearty comfort food.
It's precisely that wintertime fare (combined with good wine and good friends) that is the reason for our next dinner. We'll dim the lights, set out candles and turn up the hygge to create a cozy, wintertime setting for this special 4-course dinner. If you haven't experienced Kantine at night, this is your chance.
