Danish Ginger Crisps

The holiday season in Scandinavia just isn't the same without a cookie within arm's reach at all times, so from now and until just before Christmas, we will be baking and selling boxes of the oh-so-popular Danish Ginger Crisps (brunkager, for those in the know).
The wafer-thin, spiced cookie is a staple in the repertoire of Danish holiday treats. We make ours with almonds and candied orange peel, and a slew of spices which include ginger (of course!), cinnamon, allspice and black pepper. We make them by hand and and bake them crisp at our bakery in Hunter's Point Shipyard.
Our talented Danish friend Anne Bundgaard's whimsical artwork (above) decorates each box of 3 dozen cookies.
The boxes cost $10 each and can be purchased at Rainbow Grocery, via Good Eggs and at our farmers market stand at the Ferry Plaza Farmers Market (Note: our market stand has just two Saturdays left, Dec. 9 and Dec.16).
